Kabsi (rice with nuts and chicken) 







Ingredients for 6 servings

1 lemon, 1 large onion, 2 large tomatoes, 1 tube of tomato paste, salt, pepper, cayenne pepper, 2 bay leaves,
2 tsp curcumac, 3 cm peeled and finely chopped ginger, 1 chicken cut into 6 pieces, 4 tablespoons butter, 4 carrots,
3 tablespoons chopped walnuts, 3 tablespoons chopped almonds, 2 tablespoons pine nuts, 2 tablespoons curcuma,
4 cups basmati rice

Preparation

Put everything into a big pot: the halved lemon, halved tomatoes, halved onion, tomato paste and add some salt, cayenne pepper, orange peel, bay leaf, cardamom and ginger, the washed chicken pieces and give it just enough to cover with water, bring to a boil and simmer until the meat is cooked.

Then wash the carrots and grate them, cook it in a pan with a little butter. The nuts(almonds, pine, pistachio nuts)  coarsely chop and lightly fry in a little butter. Careful because it burns quickly.

Free the chicken parts from the bones . Strain the broth through a sieve, season with salt, pepper and add to the rice in a pot. Add rice. 4 cup rice 8 cups broth. Cook the rice, then put on side with cloth cover 1/2 Stunde. Mix chicken, roasted nuts and carrots in a bowl. Arrange everything on a plate decorative
